Green Beans in Ginger Dressing
Green beans have warming energy and help harmonize qi. They are very good for treating liver, stomach and spleen deficiencies, and help relieve diarrhea and vomiting caused by inflammation of the intestines. I may recommend this simple, good-tasting dish to someone who needs to clear away internal heat. Of course, I would also enjoy it whenever I was in the mood, because it is delicious.
Serves 2 or 3
1 pound green beans, trimmed
1/2 teaspoon sea salt
1 tablespoon minced fresh ginger
1 tablespoon rice vinegar
3 tablespoons toasted sesame oil
Fill a wok or large pot half-full of water and bring to a boil. Fill a large bowl with ice and water and set it nearby. Add the green beans to the boiling water and blanch for about 8 minutes, until fully cooked but still firm. Drain and transfer briefly to the ice water to stop the cooking. Drain again. Toss with the salt and let stand for 5 minutes in the colander to drain any excess water.
In a large bowl, combine the ginger, vinegar, and sesame oil. Toss the beans with the dressing. Let the beans marinate for 10 minutes before eating.
